I’m hoping the weather holds out this weekend so we can all enjoy a

beautiful Memorial Day. I’m excited to fire up the grill and enjoy
some delicious barbecue. I’ve put together some of my favorite
grilling recipes for you to try. First, I have a secret recipe for
some mouth-watering grilled cheddar burgers.
This is only one of the great-tasting ground beef recipes featured

New Secret Recipe

Cheddar Burgers
1 lb Lean ground Beef
3 tbsp Heinz 57 Sauce
1 cup Grated Cheddar Cheese
1/4 tsp Salt
1/2 c Soft Bread crumbs
Sandwich Buns, toasted
1/4 cup Minced onion
Mix the first 6 ingredients together in a bowl. Shape into 5
patties.
Grill or broil to desired degree of doneness.
Serve on sandwich buns; top with additional Heinz 57 Sauce, if
desired.
Makes 5 servings.

low fat secret recipe for balsamic and tomato bruschetta. This
bruschetta is a delicious guilt-free snack and is also great to
make for parties.

Balsamic and Tomato Bruschetta
1 pint cherry tomatoes, chopped
1/4 cup fresh basil, chopped
2 Tbs extra-virgin olive oil
1 Tbs balsamic vinegar
1 garlic clove, minced
1/2 tsp salt
Freshly-ground black pepper, to taste
1/2 tsp sugar
1 baguette, sliced
1 garlic clove
2 Tbs grated Parmesan cheese
Combine the chopped tomatoes, basil, olive oil, vinegar, minced
garlic, salt, pepper and sugar in a bowl. Toss.
Cut the baguette into 4 pieces. Slice in half lengthwise and place
on baking sheet. Toast in a 400 degrees F oven for about 10
minutes; turn once. Remove when crusty on both sides.
Rub bread with the garlic clove. Spoon the tomato mixture over the
bread and sprinkle with Parmesan cheese. Serve immediately.
Servings: 8

dinner.

Fried Shrimp Po’ Boy
1 10-12 long piece of New Orleans Style French Bread
4 Tbsp Mayonnaise
3 Tbsp Creole Mustard
Pickle Slices
3/4 Cup Shredded Lettuce
Tomato Slices (Optional)
Fried Shrimp for Filling (Recipe below)
Slice the bread horizontally about 3/4 of the way through, leaving
it hinged.
Spread the Mayonnaise on the inside of the bottom portion of the
bread, spread the Creole Mustard on the inside of the Top portion.
Layer you pickles and Tomatoes (if using) on the bottom portion of
the French Loaf. Fill with the lettuce, then top with the Fried Shrimp.
Fried Shrimp:
2 1/2 Cups Vegetable Oil for Frying
1/2 Cup A.P. Flour
1/4 Cup Corn Flour (Masa Harina)
1/4 Cup Corn Meal
2 Tbsp Creole Seasoning
1 Egg
2 Tbsp Water
1 Cup Peeled and Deveined Medium Shrimp
Heat the oil to 360 degrees F in a 2 qt. saucepan.
Season the flour with 1 Tbsp Creole Seasoning in a bowl.
In another bowl, Mix the egg well with 2 Tbsp of water.
In another bowl, Mix the Corn flour and Corn Meal and the remaining
1 Tbsp Creole Seasoning.
Dredge the shrimp in the seasoned flour, then the egg wash, then
the corn product mixture.
Fry in batches in the 360 degree oil until just golden brown. Do
not overcrowd the pan, and let the oil come back to temperature
before frying another batch.

Lobster Salad with Basil and Lemon Vinaigrette
2 live lobsters; 1 1/4 to 1 1/2 pound
1/2 pint red cherry tomatoes; halved
1/2 cup fresh corn; removed from cob
1/2 cup celery; sliced diagonally
1 Tbs minced fresh basil leaves
1 Tbs freshly grated lemon zest
3 Tbs fresh lemon juice
1/3 cup hazelnut oil
4 lemon wedges, for garnish
In a large stock pot of boiling salted water, plunge the live
lobsters and boil them, covered, for 8 to 10 minutes. Transfer the
lobsters with tongs to a cutting board and let cool until they can
be handled. Break off the claws at the body, crack them, and remove
the meat, cutting it into 3/4 inch pieces. Halve the lobsters
lengthwise along the underside, remove the meat from the tails, and
cut it into 3/4 inch pieces. In a large bowl combine the claw meat
and the tail meat. Break off the legs carefully at the body,
reserving them for another use, remove the meat from the body
cavities near the leg joints, and add it to the bowl.
Add the halved cherry tomatoes, corn, and celery to the lobster
meat. Toss in the basil and lemon zest and stir to combine.
In a small bowl, whisk the lemon juice with the hazelnut oil and
season with salt and pepper.
Drizzle over the lobster mixture and toss to coat it well. Season
to taste with salt and pepper.
Serves 2

Roasted Garlic and Bean Dip
1 head garlic
2 Tbs olive oil
1/2 tsp olive oil
1 medium cooking onion, diced
1 Tbs finely chopped fresh sage
2 cups cooked white beans
1/2 tsp balsamic vinegar
1 tsp salt
1/2 tsp freshly cracked pepper
To roast garlic, remove papery outer layer of skin and trim a small
portion off the top of the head to expose cloves. Place on a square
of aluminum foil. Drizzle with 1/2 teaspoon of olive oil. Seal
package and place in a 400ºF oven for 40 minutes. Remove from oven
and let cool.
While garlic is roasting, heat the remaining olive oil in a
nonstick skillet over medium heat. Cook the onion and sage together
until the onions are soft. Set aside.
In a food processor combine the onion mixture, beans, vinegar, salt
and pepper. Squeeze roasted garlic from each clove and add to the
mixture. Process until smooth. (If necessary, add water to create a
smooth mixture.)
Serve warm or at room temperature with grilled bread and vegetables.
Serves 18

Fish Tacos
1 Mahi Mahi filet
2 whole wheat wraps
1 cup of shredded lettuce
1/4 cup black beans
2 slices of tomato, diced
2 tablespoons Newman’s Own organic salsa
1 tablespoon diced onion
1 tablespoons fat free sour cream
Cilantro to taste
We put our mahi mahi in a frying pan to cook, but you could cook it
any way you like.
While that is cooking, dice tomato, onion and put together in a
bowl and sprinkle with cilantro.
Microwave the wraps, wrapped in a wet paper towel to hold in
moisture, for 20 seconds.
Put the fish and any toppings you’d like in the wrap!
Serves 1

If you live in an area that gets a typical winter season, you may find it challenging to stay fit given your environment during the winter months. Although no doubt it can get very cold in many parts of the world, the outdoors provides a wonderful opportunity to have fun and stay in shape over the winter months. Sometimes it is hard to get motivated, given the comfort and warmth of the indoors, added to the fact that we have more darkness in the mornings and evenings. Yet with a little discipline to start, the winter can be a season to be enjoyed rather than just tolerated.

For some the winter months represent a repeated cycle of packing on the pounds, only to feel bad when spring approaches because “it’s time to get ready for bathing suit season again”. Taking just a 20 minute brisk walk after dinner every evening can make the difference between maintaining your health and physique, versus feeling like a beached whale after gaining 10 or 15 pounds over the winter months.

Far from being just about keeping a certain physique, keeping active has a myriad of health benefits, one of which is mental health. Seasonal affective disorder (S.A.D.) is a depressive state that is brought on by lack of sunlight and many suffer from this. Exercise combats depression and helps ward off these winter blues.

Research has even proven the mental benefits of exercise on memory and cognition for all ages. Studies show that children who exercise show greater aptitude in academic testing and it is believed that exercise has a protective effect against dementia and Alzheimer’s in seniors.

How to Enjoy the Winter Outdoors

A winter workout doesn’t have to be a costly ordeal. Walking is free and if you want to be even more challenged, just walk through fresh snow and you’ll be working up a sweat in no time. If you are concerned about icy conditions or really have trouble bearing the cold, take advantage of the indoor walking that many local community venues organize. For seniors especially or for anyone who is going outside when the sidewalks are possibly icy, I recommend cleat-like straps that easily slip onto footwear to prevent falls.

For the more adventurous, find a second-hand sports store and you can get inexpensive snowshoes, skates, or cross-country skis. For more thrill-seeking types, for less than $20 you can invest in a toboggan and you can brave a hill with a group of kids. There is no better workout than a child who has endless energy to bound up the hill begging you to go down “just one more time PLEEEEEZ” for the umpteenth time!

As for dressing for the weather, I’ve heard it said before that there is no such thing as weather that is too cold, only clothing that is not appropriate for the conditions. Even in sub-zero temperatures, dressing with snow pants on (or at the very least long-johns under pants), layers under a winter coat, a hat, scarf, warm gloves, and boots, you will be sweating within minutes of a brisk walk. Every time I see young men wearing baseball caps in snowstorms, or women that don’t wear hats for fear of messing up their hair, I shiver inside. I too would certainly not enjoy the winter if I was not dressed properly and constantly cold.

In January 2013, Maclean’s magazine published the article entitled Why Sitting is a Dangerous Health Threat. It cites the act of being sedentary as being the new plague of our generation, akin to obesity or smoking. Sitting throughout the day for extended periods of time is linked to diabetes, heart disease and cancer. One study out of Australia showed that every single hour of TV viewed may shorten life by as much as 22 minutes.

We live in a technological age that makes us sit far more than any previous generation. Long commutes to work, jobs that require sitting still for hours, increased TV viewing in all ages, and the ever-present home computer challenge us to keep active. Why not start with having fun with winter while it lasts? After all, it keeps coming back every year, so it would seem sensible for us to learn to work with it, if for nothing more than the sake of our health.
