Rainforest Cafe Crab Cakes (Reduced Calorie)
juice of 1/2 lemon
1 tablespoon Worcestershire sauce
3/4 cup egg substitute (such as Egg Beaters)
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
pinch of red pepper flakes
pinch of Old Bay seasoning
pinch of salt
2 tablespoons low-fat mayonnaise
4 slices Sara Lee diet wheat bread
1/4 cup finely chopped fresh parsley
1 pound lump crabmeat
2 tablespoons diet margarine, melted
Directions:
Mix together the lemon juice, Worcestershire sauce, egg substitute, mustard, black pepper, red pepper flakes, Old Bay seasoning, salt, and mayonnaise in a large bowl.
Toast the bread until it is completely dry. Crumble into bread crumbs.
Add the bread crumbs and parsley to the bowl and mix well.
Be sure the crabmeat has no bits of shell, by picking through it carefully with your fingers. Add the crabmeat to the breading mixture and mix lightly.
Make into four 3-inch patties. Saute the patties in the melted margarine for 2 to 3 minutes on each side, until brown.
Serves 4
